Breakfast was never one of my favourite meals of the day but I think that’s because it wasn’t ever interesting to me. That being said if you’re able to continue making things you love, how could you not enjoy breakfast! Avocados are a tricky thing here in Canada, sometimes they are perfect, sometimes rock hard and sometimes they will brown in a few seconds. The key in avocado choice for me is *lightly* pressing on the skin to see if they are almost ripe but not quite there yet. It’s better to wait for the avocado than to rush it, haha. That being said when they’re perfect they’re magical and amazing, especially for breakfast.

This sandwich may look average but the devil is in the details as with most of my dishes. Simple doesn’t have to mean plain, and as you’ll notice I have a few fridge/pantry staples I rely on throughout my cooking and this includes my favourite must have condiment Garlic Confit. If there’s only one thing you decide to make from my blog please let it be this. It can go with everything and it is truly the gift that keeps on giving. Anyways! Lets get back to the sanny! There can be some mods here and there when it comes to the bread and lettuce, but I must say, if you stick to this recipe you’ll be one happy camper. Let’s get into it!

When you want to take a little extra time for yourself in the morning and make something delicious. This is full flavour and will set you up for success throughout the day!

  • Non Stick Pan


  • 1 Ciabatta Bun
  • 1 Large Egg
  • 1 Half of Avocado
  • 1 tbsp Everything Bagel Seasoning Linked Above
  • 1 tbsp Mayo
  • 1 tbsp Garlic Confit
  • 1 Slice of Cheddar Cheese
  • 1/2 cup Pea Shoots


  • Heat up non-stick pan to medium.
  • In small bowl mix mayo and confit until combined. Cut ciabatta and spread mayo mix liberally on both sides.
  • Place ciabatta cut side down and grill until toasted medium brown, once done put aside.
  • Lower heat to low, spray with non-stick spray and add egg. Flip after 1-2 minutes depending on heat of pan. I like my yolk runny so cook based on your preference. Add salt and pepper, cheese to flipped egg and turn off heat and place lid on pan to melt cheese.
  • Remove avocado from skin and slice thinly. Place evenly on bottom side of toasted ciabatta and add everything mix to avocado.
  • Carefully place egg on top of avocado, top with pea shoots and lid the sannie. ENJOY!
