Sometimes I’m my own worst enemy when it comes to grocery shopping. I am a more is more kinda gal and that’s no exception when it comes to grocery shopping. It’s a blessing and a curse. I’m often left with things I don’t need, just want, and by the end of the trip I have so many random things because I get easily excited ok! This Queso Fresco was one of those things. I went to a specialty grocery store and saw it and couldn’t place in my basket fast enough, I love reaching for things I can’t get often. Did I know what I was going to use it for? No, did I care? Also no.

It came to the point where I was doing my weekly(ish) fridge clean out and saw this cheese, just sitting there, all innocent and begging to be used. It was also about to go off and I knew it was the cheese’s time to shine. I remembered I baked a load of bread a few days ago and that needed to be used as well.

What I did know about the queso fresco was it had a high melting point similar to haloumi, another favourite of mine. I then knew what to do. This whole breakfast came together in less that 10 minutes and kept me full for a while. The high protein in the cheese and heartiness of the bread made for a perfect start to the day. The secret star was the hot honey as it’s been my go to for elevating anything and everything it can. I hope you decide to make this one day and you’ll be super happy and maybe dance in your kitchen like I did after it was done.

Grilled Queso Fresco Breakfast Toast

Ingredients
  

  • 3-5 Slices Queso Fresco Cheese
  • 1-2 Slices Toast If you can get your hands on a fresh loaf, home made bread or some sourdough these would be great! But to me most bread is good bread
  • 1 tbsp Hot Honey

Instructions
 

  • Toast the bread, I like to broil in the oven or use a toaster
  • While bread is toasting, place cheese slices in a medium hot pan. Try to avoid flipping to many times as we want a nice deep brown colour, the moisture should be cooking out at this point
  • Once both sides are browned nicely, arrange the slices on the toast in a nice even layer
  • Once cheese and bread are friends drizzle the hot honey all over, enjoy immediately and be happy with this delicious breakfast that took no time
