It’s been said you eat with your eyes first. This dish is no exception. That’s why this is ‘The Prettiest Rice Bowl Ever’. The ingredients involved require so many delicious elements and when put all together they are a match made in heaven. To get started you’ll need both my Perfect Smokey Enoki Recipe and my Soy Sesame Crusted Tofu and aside from that this comes together really quickly. You can also make and hold the rice while items are cooking in the oven or air fryer. It’s the perfect thing to make for lunch ahead of time or a meal prep type of situation as all of this keeps really well.

This involved a few of my pantry staples and one of them is frozen shelled edamame. A frozen pea would work well here also but there’s something nice about the robust nature of an edamame bean and frozen veggies are the best thing to have.

Whenever I’m making rice I more often than not make extra. This is ideal for stir fry’s and using up any veggies in your fridge that need to be cooked ASAP. Extra rice is never a bad thing to have.

  • Rice Cooker
  • Large sheet pan
  • Air Fryer
  • Small Sauce Pan


  • 1 cup Sushi rice or Short grain rice When I cook rice I use the knuckle trick, the tip of your finger should touch the very top of your rice and the water should hit your first knuckle. ALWAYS rinse your rice btw. Always.
  • 1 cup Frozen Edamame
  • 1 Of my Enoki Mushrooms Recipe Linked Above 🙂
  • 1 Of my Sesame Crusted Tofu Recipe Linked Above 🙂
  • 2 tbsp Kewpie Mayo
  • 2 tbsp Sriracha
  • 2 tbsp Fried Onions Use for Garnish
  • 1 tsp Rice Vinegar


  • Cook both enoki mushrooms and sesame crusted tofu according to stated recipe.
  • While doing this get the Rice going in the rice cooker, add the water and rice vinegar.
  • Fill sauce pan with water and boil, once boiling add frozen edamame and cook for 5-6 minutes. Drain and toss with flakey sea salt.
  • Time to plate! Rice on the bottom and portion each ingredient in it's own portion of the bowl, ie; edamame, beside enoki, beside tofu. Top with kewpie mayo, Sriracha and fried onions. Enjoy!
